Energy bites for Christmas breakfast

These 2-bites sized energy bites can be eaten anytime of course, but I had them for breakfast this Christmas. As you can see, I didn't overdo them, since they are a high calorie food, due to their natural fat content from the nuts.

This time I made 3 different flavours: orange - cranberry, coffee, mint - dark chocolate.

Every recipe makes about 20-20 squares or balls.

 

Orange-cranberry energy bites

  • 1 cup gluten free rolled oats
  • 1 cup walnut
  • 1 cup pecan
  • 7 pcs dried dates
  • 1/4 cup dried cranberry
  • zest of 2 oranges
  • 1 medium size orange

Instruction:

  • blend the rolled oats, make it powder like
  • blend the walnut (don't overdo it, because it becomes too oily)
  • blend the pecans (don't overdo it, because it becomes too oily)
  • grate the orange peel (don't grate the white part)
  • mix the dry and blended ingredients (oats, walnut, pecan), the zest and dried cranberry
  • put the orange, dried dates into the blender and blend it into a paste
  • mix the dry mixture with the orange-date paste, as long as it becomes a sticky mixture
  • squeeze the mixture into a silicon ice cube maker, then push the squares out of it, or make little balls

 

Coffee energy bites

  • 1 cup gluten free rolled oats
  • 1 cup walnut
  • 1 cup pecan
  • 7 pcs dried dates
  • 1/4 cup dried cranberry
  • 1/4 cup coffee (or 1/4 cup hot water and 1 tsp instant coffee) - you can use mushroom coffee too

  • blend the rolled oats, make it powder like
  • blend the walnut (don't overdo it, because it becomes too oily)
  • blend the pecans (don't overdo it, because it becomes too oily)
  • mix the dry and blended ingredients (oats, walnut, pecan) and dried cranberry
  • put the coffee and dried dates into the blender and blend it into a paste
  • mix the dry mixture with the coffee-date paste, as long as it becomes a sticky mixture
  • squeeze the mixture into a silicon ice cube maker, then push the squares out of it, or make little balls

 

Mint - dark chocolate energy bites

  • 1 cup gluten free rolled oats
  • 1 cup walnut
  • 1 cup pecan
  • 20 g 90% dark chocolate chopped into small pieces
  • 7 pcs dried dates
  • 8-10 mint leaves
  • 1/4 cup water

Instruction:

  • blend the rolled oats, make it powder like
  • blend the walnut (don't overdo it, because it becomes too oily)
  • blend the pecans (don't overdo it, because it becomes too oily)
  • mix the dry and blended ingredients (oats, walnut, pecan) and chopped dark chocolate
  • put the water, mint leaves and dried dates into the blender and blend it into a paste
  • mix the dry mixture with the minty date paste, as long as it becomes a sticky mixture
  • squeeze the mixture into a silicon ice cube maker, then push the squares out of it, or make little balls
