Incredibly easy to make, it doesn't require any cooking and very tasty. And you can eat all the colours of the rainbow in one simple meal.

 

  • 24 pcs rice paper
  • yellow bell pepper, sliced
  • red bell pepper, sliced
  • alfalfa sprout
  • beet (cooked or raw), sliced
  • pickles, sliced
  • anchovies (canned)
  • marinated artichoke, sliced
  • olives, halved 

Instructions

  • Pour warm water into a big enough bowl.
  • Soak 1 pc of rice paper into it. Never more than one at a time.
  • When it gets soft, remove it from the water and put it on a plate or chopping board. Smooth it.
  • Put the next rice paper into the water, so it gets soft by the time you finish filling the previous one. 
  • Place the chopped/sliced ingredients to the middle of the one that's on the plate/chopping board. Just a bit from everything.
  • After you put all the fillings in the middle, fold the bottom of the rice paper up onto the filling pile.
  • Next, fold the top part of the rice paper down onto the filling pile.
  • Next fold one of the sides on top of the pile, then roll it up.
  • It's more complicated to write it down, than to make it.
