I woke up at 4.45 this morning again, because my older daughter had a swim meet from 6. My younger one was swimming later, so she joined us later. I spilled a bottle of water in the kitchen, because I didn’t know, that the top was loose. Time was running fast, but I hadn’t have my breakfast yet. I was not even prepared yet. I wanted my salad. I prepared breakfast in the evening for the girls. But I didn’t want to have such a calorie bomb on a day, when I have to sit whole day next to the pool.
No excuses! I whipped up this salad, put everything away, made a photo in 5 minutes and we were ready to go. Since I didn’t have time to eat it at home, I put it into a box and I had it next to the pool. I brought a fork too, of course.
- 1 big handful of romaine lettuce
- 1 handful of arugula/ rocket
- 1 big handful spinach
- ½ marinated artichoke, chopped
- 1 handful zucchini, chopped
- 1 cooked chicken liver, chopped (I cooked a big batch in water the day before)
- 1 handful red cabbage, chopped
- 1 handful butternut squash, raw, chopped
- 4 pcs capers
- 3-4 pcs cherry tomato, halved
- 1 handful carrot, chopped (4-5 baby carrot)
Chop everything, throw them into a bowl, sprinkle with a dressing, enjoy.
This time I didn’t have the time for making a dressing. So I used ½ Tbsp marinating olive oil from the artichoke.
