Chicken liver arugula salad

Another salad idea, this time with chicken liver. Why with liver? Because it's very high on important nutrients. It's a real treasure.

You can see 4 portions on the picture, but the recipe below is enough only for 1 portion.

 

  • half chopped head of romaine lettuce - chopped
  • 2 handful for arugula
  • 1/2 chopped pok choy
  • 1 big pinch of broccoli sprout
  • 1/8 chopped yellow squash
  • 4-5 pcs halved cherry tomato
  • 1 cooked sliced chicken liver
  • 1/4 chopped avocado
  • 3 Tbsp cooked brown rice - quinoa mix
  • 2-3 pcs crashed macadamia nut (if tolerated)

I had leftover quinoa- brown rice mix, so I used that. I always make a bigger batch, so I can use it, whenever I need it.

Chicken liver was again leftover from yesterday. I just boiled it in hot water, while it stopped "bleeding".

I share the sauce recipe in a separate post. If you don't have time to make the sauce, add apple cider vinegar, balsamic vinegar or lemon juice.
