Here's another soup recipe for today. This one is bone-broth based as well, with plenty of colourful veggies. At the end I topped it with grilled chicken pieces.
Yesterday I was running late. I had only 10 minutes till we had to leave for swimming with the girls. Krisz, my husband arrived home and wanted to bet with me. He thought that I can't whip up a dinner in 10 minutes. I had leftover grilled chicken and I had frozen bone broth cubes, so that made my life easier.
Finally the girls conviced him, that he would lose. If I say I finish it in 10 minutes, then I finish it in 10 minutes. :D And of course, I finished it in 8 minutes. :D
- 3 cups frozen bone broth
- 2-3 medium sized broccoli, I chopped up the stem as well, where it wasn't woody
- 1 medium head onion, peeled and chopped
- 1 yellow zucchini, chopped
- 1 green zucchini, chopped
- 1 bunch of celery, sliced
- 3-4 cloves of garlic, minced
- salt to taste
- water to cover the veggies
I chopped all the veggies and put them into my instant pot (pressure cooker). It can be cooked in a pot as well of course. A put the frozen bone broth cubes, salt and water into the pot as well. I switched the instant pot on, then off we went for swimming with the girls.
After we arrived home, I minced the garlic and added it to the hot soup. Chopped the chicken, and threw it on top of the soup. The girls ate it with cooked brown rice-quinoa mix. I ate it without that. But I always have some cooked brown rice-quinoa mix at home, to make my life easier.
