Perhaps you can still remember, that some days ago I posted an apple pie recipe. I tweeked the recipe of that pie dough and used that here without baking it.
Bottom layer
- 1.5 cup ground gluten free rolled oats
- 1.5 cup pumpkin puree
- 1 cup cooked quinoa
- 1/4 cup (7 pcs) pitted dried dates
- 1/4 tsp ginger powder
- 1 tsp cinnamon
- 1/4 tsp ground nutmeg
- water, that's enough to cover the dates
Top layer
- 1 can Aroy-D coconut milk
- 20g 90% dark chocolate
- 7 pcs pitted dried dates
- 2 Tbsp chia seed (optional)
- 1 Tbsp gelatin powder
- 5 Tbps warm water
- zest of 1 orange (after washing, grate the orange colored layer only)
Instructions
- Make a powder with a blender from the rolled oats
- Mix the cooked quinoa with the oats
- Blend the pitted dated, pumpkin puree, spices and water
- Combine the dry and wet mixtures
- Put this mixture into the bottom bowls/ramekins/glasses
- Chop the chocolate into small pieces and melt it in the microwave oven in approx 1-1.5 minutes. Stir it every 30 seconds.
- Heat the water
- Add the gelatin to the water and dissolve it
- Grate the zest of the orange (wash it beforehand)
- Blend the coconut milk, melted chocolate, dried dates, gelatin water, orange zest
- Add chia seed and stir it in (if you use it)
- Pour the chocolate sauce on top of the oat-quinoa layer
- Decorate the top with pomegranate
Don't you have quinoa at home? Use brown rice instead.
