Pumpkin orange chocolate glass dessert

Perhaps you can still remember, that some days ago I posted an apple pie recipe. I tweeked  the recipe of that pie dough and used that here without baking it.

 

Bottom layer

  • 1.5 cup ground gluten free rolled oats
  • 1.5 cup pumpkin puree
  • 1 cup cooked quinoa
  • 1/4 cup (7 pcs) pitted dried dates
  • 1/4 tsp ginger powder
  • 1 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • water, that's enough to cover the dates

Top layer

  • 1 can Aroy-D coconut milk
  • 20g 90% dark chocolate
  • 7 pcs pitted dried dates
  • 2 Tbsp chia seed (optional)
  • 1 Tbsp gelatin powder
  • 5 Tbps warm water
  • zest of 1 orange (after washing, grate the orange colored layer only)

Instructions

  1. Make a powder with a blender from the rolled oats
  2. Mix the cooked quinoa with the oats
  3. Blend the pitted dated, pumpkin puree, spices and water
  4. Combine the dry and wet mixtures
  5. Put this mixture into the bottom bowls/ramekins/glasses
  6. Chop the chocolate into small pieces and melt it in the microwave oven in approx 1-1.5 minutes. Stir it every 30 seconds.
  7. Heat the water
  8. Add the gelatin to the water and dissolve it
  9. Grate the zest of the orange (wash it beforehand)
  10. Blend the coconut milk, melted chocolate, dried dates, gelatin water, orange zest
  11. Add chia seed and stir it in (if you use it)
  12. Pour the chocolate sauce on top of the oat-quinoa layer
  13. Decorate the top with pomegranate

 

Don't you have quinoa at home? Use brown rice instead.
