Daikon radish salad

  • 3 pcs daikon radish, washed
  • 10 pcs olives, chopped
  • 4 pcs green onion, chopped
  • 1 handful parsley, chopped
  • 2 Tbsp olive oil
  • 1 Tbsp apple cider vinegar
  • 1 tsp garlic powder
  • salt to taste

Instructions

  • After washing the daikon radishes, start peeling it with a julienne peeler, as long as there's some radishes left. If you don't have a julienne peeler, then you can grate it or you can use a simple peeler and you can make radish ribbons.
  • Chop the olives and green onion, and add them to the radish.
  • Salt the veggies.
  • Mix the olive oil, apple cider vinegar and garlic powder.
  • Pour it on top of the salad. Mix it.
  • Let it sit for a while if you have time. If you don't have time, just serve and enjoy.
