Lemongrass veggie soup

I used the turkey bone-meat broth for this soup too. I used the following ingredients.

 

  • 1 lb green bean, ends chopped off, cut into half
  • 1 medium head onion, chopped
  • 1/2 lb tenderstem broccoli/broccolini
  • 1 cup enoki mushroom, dirty end cut off
  • 2 cups butternut squash, chopped
  • 2 pcs lemongrass, cut into half lengthwise
  • 1 Tbsp fish sauce
  • 3 cloves garlic, peeled and minced
  • salt to taste
  • 3 cup bone broth
  • water to cover all veggies

Clean and chop all veggies. Put them into a pot or a pressure cooker. Add the water, bone broth, salt, lemongrass, fish sauce. Add the minced garlic only at the end of cooking.
