I start an Eat the rainbow 30 day challenge from 1st February. The goal is to eat all the colours of the rainbow every single day. Only natural foods count! If you'd like to take part in it, then click here and join the facebook group!

Why is it good? All the different coloured veggies and fruits help you to supply plenty of useful vitamins, minerals, fibre and antioxidants, that our body really need.

The bellow recipe is a good example, what kind of foods you can eat in that 30 days. Not just salads ;) And you can eat meat too, if you are a meat eater. :) I eat some meat too, as you can see from my other recipes. :) Believe it or not, I didn't miss the meat from this salad. It was tasty this way.

  • 2 big handful of roman lettuce, chopped
  • 1 big handful of baby spinach
  • 1 big pinch of broccoli sprout
  • 1/2 marinated artichoke (it was in quarters, so I put 2 quarters on my salad)
  • 1 Tbsp pickled capers
  • 1/4 avocado, chopped
  • 1/2 orange bell pepper, chopped
  • 1/2 purple endives, sliced

Chop and slice everything, put into a bowl and enjoy. I didn't put any dressing on top of this, because the marinating oil of the artichoke and the pickled capers did the job.
