Probably you have spotted, that the preparation time is 20 minutes, the cooking time is 50 and the total time is 60. How can it be? The reason is, that while the sweetpotato is in the oven (50 minutes), I can work on the rest. But why is it 60 intead of 50? Because I have to preheat the oven. There's only perhaps 20 minutes work with this meal.
- 1 medium head red cabbage, sliced
- 1 medium-big onion, peeled and sliced
- 1 lb ground turkey
- 3 pcs bok choy
- 1 bell pepper, chopped
- 1 Tbsp marjoram
- 1/4 tsp ground black pepper
- 2-3 cloves garlic, minced
- salt to taste
- 1 medium sweetpotato per portion. If you make more, you can use them in another meal.
Instruction:
- Preheat oven to 400 F.
- Wash the sweetpotatoes and put them on a baking paper covered baking pan.
- When the oven reached this temperature, put the sweetpotato into the oven for 50 minutes. It might be less, it's good when the knife can easily pierce it through.
- Peel and chop the onion.
- Put the onion into a pot and turn the stove on to low heat below the onion. Since I don't use fats for cooking, I soften it on a low heat.
- Remove the outer leaves of the cabbage and slice it. Mix it to the onion.
- Chop the bok choy, add to the cabbage.
- Chop the bell pepper, add to the rest.
- Mix in the ground turkey, spices and salt too.
- Cover it and let it steam in its own juices. Cook it till the turkey gets whitish. At this point the veggies still might be crunchy. If you want them softer, keep cooking them some more minutes. Stir it occassionally.
- Peel and mince the garlic. Stir it to the turkey-veggie mixm when you stop cooking.
I served it with cooked chicken liver. I cooked approx 1/2 lb chicken liver in salty water. i poked it with a knife after a couple of minutes and when no more blood was coming, I removed it from the stove.
