- 1.5 cup cashew
- water for soaking
- 1 cup water to prepare it
- 4 Tbsp lemon juice
- 4 tsp apple cider vinegar
- 1/4 tsp salt
- 1/4 tsp garlic powder
- 3-4 Tbsp chopped chives
Instructions
- If you have time, soak the cashew overnight. The water should completely cover it.
- If you don't have too much time, soak it in hot water for 1 hour.
- Remove the soaking water.
- Put the soaked cashew into a blender.
- Add the fresh water to the blender too.
- Add the lemon juice, apple cider vinegar, salt and garlic powder too.
- Blend everything.
- When it's creamy enough, and you like the taste, add the chopped chives and stir it in with a spoon.
- If the taste is not good enough, you can add more lemon juice and/ or apple cider vinegar, salt or garlic powder. First add only 2 Tbsp lemon juice and 2 tsp apple cider vinegar. Then start adding more, if you don't find it sour enough. I prefered it with more lemon juice and apple cider vinegar, I prefered the more intense taste.
- If it's too thick, add a bit more water.
