Yesterday we tried the waffle mix, that I bought from Costco. It was good, but I don't like to buy processed foods in general. I prefer to make everything from scratch and if possible, with much less ingredients.
This waffle is gluten free, dairy free, egg free, soy free, refined sugar free, nut free.
- 2.5 cups gluten free rolled oats
- 2 cups water, or the amount that covers the oats
- 2 heaped Tbsp ground flaxseed
- 2 medium banana peeled
- 1-2 Tbsp melted coconut oil
Instructions
- Put the rolled oats into a bowl, cover it with water and let it sit overnight or for several hours.
- Preheat the waffle maker.
- Put the overnight oats into a blender.
- Add 2 cups of water.
- Add the flaxseed and coconut oil.
- Blend everything.
- Put the mixture into the waffle maker. For me, 1 portion is approx 2.5 Tbsp mixture, but your waffle maker can be bigger or smaller. 1 round was approx 5 minutes in my waffle maker.
I put some chocolate sauce on the top with some fruits. I used these ingredients for the sauce.
- 1 can Aroy-D coconut cream (60% coconut, rest is water)
- 10 g melted 100% dark chocolate
- 8 pcs pitted dried dates
Blend all these ingredients and it's ready to be served and eaten. I put it on top of warm waffle, so it became runny. Anyway it has a thicker consistency.
