Green bean and daikon radish salad

  • 1/2 daikon radish, peeled
  • 250g green bean, ends chopped
  • 2 Tbsp pumpkin seed
  • 2 Tbsp pecan, chopped
  • salt to taste
  • 1/2 Tbsp olive oil

Instructions

  • Chop the end of the green bean off and cook it in water. You can steam it too, it's up to you. (If you cook it in water, you can make a soup from the cooking water or you can just drink it as it is.)
  • Peel the daikon radish, slice it with a julienne peeler/ cutter. You can grate it too.
  • Mix the cooked green bean, the julienned radish, pumpkin seed, chopped pecan, salt and olive oil.

We ate it with oven baked salmon and quinoa.
