Zucchini mushroom chicken stew

  • 1 medium head onion, peeled, chopped
  • 1 ½ zucchini, chopped
  • 1 ½ yellow zucchini, chopped
  • 3 cups carrot, chopped
  • 2 cups white button mushroom, chopped
  • 1 lb chicken breast, chopped into small pieces
  • ½ Tbsp paprika powder
  • 1 tsp garlic powder
  • 1 tsp tarragon
  • salt to taste

 

Instructions

  • Preheat a pot on low heat.
  • Put the peeled and chopped onion onto the pot and start to sautee.
  • Put the chopped chicken breast into the pot too.
  • Add all other ingredients, stir.
  • Cover with lid and let it steam/ cook in it’s own juices.
  • Stir occasionally.
  • Serve and enjoy!
