I made this pizza 2-3 years ago. The picture was made by a dear friend, Rita.
This is a gluten free, dairy free, soy free, refined sugar free pizza. And it's tasty.
Dough
- 2 ripe plantains, peeled, chopped into big pieces
- 4 eggs
- 1 pinch of salt
- 2 Tbsp ground flaxseed
- 4 tbsp desiccated coconut
- 1 tsp baking powder
- 1 tsp garlic powder
- 1 tsp oregano
- 1/2 tsp basil
Tomato sauce
- 2 Tbsp tomato puree
- 3 Tbsp water
- 1 tsp garlic powder
- 1 tsp oregano
- 1 pinch of salt or to taste
Topping
- bacon diced
- bell pepper, chopped
- tomato chopped
- red onion, chopped
- asparagus, chopped
Instructions
- Preheat oven to 400 F.
- Place a baking sheet onto a pan.
- Put all dough ingredients into a blender and make a smooth dough.
- Spread the dough on the baking sheet.
- When the oven has reached the right temperature, place the pan into the oven.
- Bake it as long as it turns golden brown. I'd start checking it after 15 minutes.
- While the dough is in the oven, mix all sauce ingredients.
- Remove the pizza from the oven. Carefully remove the paper from the bottom, and place it face down on another baking sheet.
- Spread the sauce on top of it.
- Throw all topping on top of it and put it back to the oven, for another couple of minutes.
- When it's done, remove from the oven.
- Serve and enjoy.
