I made this pizza 2-3 years ago. The picture was made by a dear friend, Rita.

This is a gluten free, dairy free, soy free, refined sugar free pizza. And it's tasty.

 

Dough

  • 2 ripe plantains, peeled, chopped into big pieces
  • 4 eggs
  • 1 pinch of salt
  • 2 Tbsp ground flaxseed
  • 4 tbsp desiccated coconut
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1/2 tsp basil

Tomato sauce

  • 2 Tbsp tomato puree
  • 3 Tbsp water
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 pinch of salt or to taste

Topping

  • bacon diced
  • bell pepper, chopped
  • tomato chopped
  • red onion, chopped
  • asparagus, chopped

Instructions

  • Preheat oven to 400 F.
  • Place a baking sheet onto a pan.
  • Put all dough ingredients into a blender and make a smooth dough.
  • Spread the dough on the baking sheet.
  • When the oven has reached the right temperature, place the pan into the oven.
  • Bake it as long as it turns golden brown. I'd start checking it after 15 minutes.
  • While the dough is in the oven, mix all sauce ingredients.
  • Remove the pizza from the oven. Carefully remove the paper from the bottom, and place it face down on another baking sheet.
  • Spread the sauce on top of it.
  • Throw all topping on top of it and put it back to the oven, for another couple of minutes.
  • When it's done, remove from the oven.
  • Serve and enjoy.
