Pea-broccoli-chicken stir fry

 

  • 1 medium onion, peeled, chopped
  • 2 small, or 1 big head and stem of broccoli, chopped
  • 2 cups pea
  • 2 bell peppers, chopped
  • 15 pcs cherry tomato, halved
  • 2 big handful baby spinach
  • 2 cups baby bella mushroom
  • 2 cups shiitake mushroom
  • half a grilled chicken, chopped (leftover)
  • 3 tsp fajita spice mix

 

Instructions

  • Preheat the pot on low heat.
  • Add onion and sautee it.
  • Add all the other vegetables and mushroom.
  • Add salt, spices, stir, cover with lid.
  • Stir occasionally.
  • Add chopped/shredded grilled chicken.
  • Serve and enjoy.

 

If you prefer to have a bit more carb, you can eat it with sweet potato, potato, quinoa or brown rice. We ate it with quinoa, brown rice mix.
