Pea-broccoli-chicken stir fry
- 1 medium onion, peeled, chopped
- 2 small, or 1 big head and stem of broccoli, chopped
- 2 cups pea
- 2 bell peppers, chopped
- 15 pcs cherry tomato, halved
- 2 big handful baby spinach
- 2 cups baby bella mushroom
- 2 cups shiitake mushroom
- half a grilled chicken, chopped (leftover)
- 3 tsp fajita spice mix
Instructions
- Preheat the pot on low heat.
- Add onion and sautee it.
- Add all the other vegetables and mushroom.
- Add salt, spices, stir, cover with lid.
- Stir occasionally.
- Add chopped/shredded grilled chicken.
- Serve and enjoy.
If you prefer to have a bit more carb, you can eat it with sweet potato, potato, quinoa or brown rice. We ate it with quinoa, brown rice mix.
