Arugula salad with beef liver

I had some leftover beef liver from yesterday, so I used that for my morning salad.

  • 3 handful arugula/rocket
  • approx 3 in chopped English cucumber 
  • 2-3 twigs of fresh chopped parsley
  • 3 big pinches of broccoli sprout
  • 1/4 chopped avocado
  • 1 raw chopped carrot
  • 1/2 raw chopped yellow squash
  • 3-4 Tbsp leftover beef liver, cooked on onion
  • 1 Tbsp pumpkin seed
  • fresh lemon juice - up to your taste

 

If you have some leftover beef liver at home, just chop and mix all ingredients and splash some lemon juice on top. That's it, you can eat it.

If you don't have leftover beef liver, but you have some raw beef liver, chop 1/2-1 onion, sautee it without oil on low heat, add the chopped beef liver, cook for 2-3 minutes. Serve and enjoy.

The amount of onion depends on the amount of beef liver. I added 1 onion to 3 big slices of liver. And I used only 3-4 Tbsp out of it.
