Mango - salmon rainbow salad

  • 1 big handful romain lettuce
  • 1 big handful arugula
  • 1 big handful of spinach
  • 4 caperberries
  • 1/2 mango peeled and chopped
  • 1/3 cup raw butternut squash, peeled and chopped
  • 1 big pinch broccoli sprout
  • 1 Tbsp sliced almond
  • 1/6 head of radicchio, sliced
  • 1/3 cup baked salmon

 

Chop everything, through them into a bowl and you can eat it. I some dressing on it. This amount of dressing is enough for 3-4 portion.

  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 1 pinch of salt
  • 1/4 tsp garlic
  • 6 Tbsp water

Mix everything, drizzle 2 Tbsp of this dressing on the salad, enjoy.
