Cauliflower-kale-turkey stir fry

  • 1 medium head onion, peeled and chopped
  • 1 lb ground turkey
  • 1/4 lb baby kale
  • 1 green zucchini, washed, chopped
  • 1 yellow zucchini, washed, chopped
  • 1 lb carrot, washed and chopped
  • 1 big head cauliflower, chopped
  • 1 bell pepper, chopped
  • 1 pack celery, chopped
  • 1/2 Tbsp dried marjoram
  • 1/2 Tbsp dried tarragon
  • 1 tsp garlic powder
  • salt to taste

Instructions

  • Put the peeled and chopped onion into a pot on low heat.
  • Stir in the meat.
  • Add the chopped bell pepper, celery, baby kale, carrot and cook, steam under cover.
  • If you want to have your cauliflower and zucchinis a bit firmer, add them a couple of minutes later, so they won't be that soft as mine.
  • Add the salt and spices, stir and cover.
  • When all veggies are soft enough, and the meat is cooked through, the meal is done.
