I used these ingredients for 1 piece. I made 3-4 pieces per person. We ate it as an appetizer before a lunch, when we had guests over.
- 1 small romaine lettuce leaf
- 1/2 Tbsp home made hummus
- 1 pc cooked shrimp, chopped into 3, tail removed
- 1-2 pcs cherry tomato, chopped
- 1 Tbsp cooked brown rice-quinoa mix
- 1/2 tsp pumpkin seed
- 1 pinch broccoli sprout
- a couple of pieces of capers or chopped olives
Instructions
- Cook brown rice and quinoa. (I always cook them together in my Instant Pot. It takes only about 20 minutes. I used leftover now.)
- Separate the lettuce leaf from the head.
- Spread the hummus on the leaf.
- Sprinkle the cooked rice-quinoa on the leaf.
- Put the shopped shrimp, tomato, pumkin seed, broccoli sprout, capers or chopped olives.
- Serve and enjoy.
