Lettuce shrimp taco

I used these ingredients for 1 piece. I made 3-4 pieces per person. We ate it as an appetizer before a lunch, when we had guests over.

 

  • 1 small romaine lettuce leaf
  • 1/2 Tbsp home made hummus
  • 1 pc cooked shrimp, chopped into 3, tail removed
  • 1-2 pcs cherry tomato, chopped
  • 1 Tbsp cooked brown rice-quinoa mix
  • 1/2 tsp pumpkin seed
  • 1 pinch broccoli sprout
  • a couple of pieces of capers or chopped olives

Instructions

  • Cook brown rice and quinoa. (I always cook them together in my Instant Pot. It takes only about 20 minutes. I used leftover now.)
  • Separate the lettuce leaf from the head.
  • Spread the hummus on the leaf.
  • Sprinkle the cooked rice-quinoa on the leaf.
  • Put the shopped shrimp, tomato, pumkin seed, broccoli sprout, capers or chopped olives.
  • Serve and enjoy.
