I see it in so many cases, that people fry the meatballs is oil. And they use breadcrumbs or dry bread to make them. There are much healthier options and they are just as tasty.

We had this a couple of days ago for dinner. My daughters took this to school too. I share a turkey and a vegan meatball recipe.

If you flatten the balls, like burger meat, then you can use the vegan ones instead of breadrolls, and you can use the turkey in between. If you are vegan, you can put the vegan bean burger in between 2 big mushrooms.

I know, this might sound weird. It's not the usual way. But this is an option too.

We ate it with oven baked (no oil) sweet potato, cashew sour cream, lettuce and kimchi. You can replace the kimchi with other fermented veggies too (like sauerkraut).

 

Carrot-yellow zucchini turkey meatballs

  • 2 lb ground turkey
  • 2 big carrots, washed, grated (not peeled)
  • 1 yellow zucchini, washed, grated (not peeled)
  • 1 handful chives, chopped
  • 5 tsp salt or to taste
  • 2 Tbsp chipotle spice mix
  • 1 tsp garlic powder

 

Instructions

  • Preheat oven to 420 F.
  • Cover a baking tray with baking paper.
  • Wash and grate the veggies, put them into a bowl.
  • Add the ground turkey, salt and spices and mix them with the veggies.
  • Form little balls from the mixture.
  • Put the balls on the baking sheet.
  • When the oven reaches the right temperature, place the meatballs into the oven.
  • Bake them for approx. 25 minutes.
  • Remove them from the oven. Serve and enjoy.

 

Bean and veggie balls

  • 1 can pinto bean, drained
  • 1 can great northern bean, drained
  • 1 cup gluten free oats, ground
  • 2 big carrots, washed, grated (not peeled)
  • 1 yellow zucchini, washed, grated (not peeled)
  • 1 handful chives, chopped
  • 1 tsp salt or to taste
  • 2 Tbsp chipotle spice mix
  • 1 tsp garlic powder

 

Instructions

  • Preheat oven to 420 F.
  • Cover a baking tray with a baking paper.
  • Drain the beans and put them into a bowl.
  • By using a hand blender, pure them.
  • Put the oats into a blender and blend them.
  • Add the oats, spices, grated veggies, salt to the bean.
  • Mix all ingredients.
  • Make balls from the mixture and put the balls on the baking sheet. If you flatten them a bit, you can use them instead of breadrolls, when they are done.
  • Put them into the oven when the oven is hot enough.
  • Bake the for approx. 25 minutes, then flip them to the other side, so the bottom can dry up a bit too. Bake them for another 10-15 minutes, or when they get firm enough.
  • Remove them from the oven. Serve and enjoy.

 

I put the sweet potato slices on a baking paper covered baking tray, put some salt and spices on it and baked it while the meatballs were in the oven. It needs a different amount of time, so keep an eye on them.
